That's exactly what testdisk should be able to do for you, in my
experience. I told it to look at the disk, and it found the partition
table I'd deleted. After restoring that partition table, I was able to
access all my data again.

It seems to look in "the usual places" where partition table copies
are stored on a disk, and then reads that info to determine what is
there, or used to be there, and then you can restore that info to the
master partition table. At least, that's how I remember it.
