If you're looking to convert docs from different applications (eg html,
word, etc) then the best way is to get your application to print to a
custom printer driver that produces PostScript or PDF.  RedMon
(http://www.cs.wisc.edu/~ghost/redmon/) does that for Windows and Samba
(http://linuxreviews.org/quicktips/sambapdfwriter/) can do that in
Linux.
